Pick when pods are small to medium size to avoid development of “strings.” A favorite across the South, Rattlesnake is a full-flavored bean with a sweet, rich taste. Green pods are streaked with purple (changes to green when cooked). Very tender and freezes without becoming “rubbery” like most bean varieties.
Red onions are cultivars of the onion (Allium cepa) with purplish-red skin and white flesh tinged with red. They are most commonly used in the culinary arts, but the skin of the red onion has also been used as a dye. These onions tend to be medium to large in size and have a sharp flavor and eye-watering qualities.
Kale leaf cabbage, belongs to a group of cabbage (Brassica oleracea) cultivars grown for their edible leaves, although some are used as ornamentals. Kale plants have green or purple leaves, and the central leaves do not form a head (as with headed cabbage).
Micro greens are young vegetable greens that are approximately 1–3 inches (2.5–7.5 cm) tall. They have an aromatic flavor and concentrated nutrient content and come in a variety of colors and textures. Micro-greens are considered baby plants, falling somewhere between a sprout and baby green.
Cut the tops off. Brush off any soil, but don’t wash them. Store your beets in an open bowl or another container with a damp towel or paper towel set over the top. Don’t refrigerate.
A broad leafed green plant, related to kale that is used as an ingredient in green salads, or as a vegetable to be served for a cooked vegetable dish, or combined and with other ingredients to be stir fried and served as part of a main dish.
